Lavender Almond Biscotti

Ingredients

1tbs Culinary grade lavender flower
Lemon zest of one whole lemon
2tsp Baking powder
2 Cups flour
1/3tsp Salt
1/2 Cup sugar
2tsp vanilla 
2 Large eggs
1/2 Cup chopped almonds
1/2 Cup butter (melted)      
    

Method

Preheat oven to 325f
Whisk together flour and baking powder 
In a separate bowl whisk together eggs, water, sugar lemon zest and the melted butter
Add in remaining ingredients including the lavender 
( I like to crush them with a mortar and pestle before adding them but if you enjoy the look/texture of whole lavender go for it!) 
Combine the wet mixture with the dry mixture 
Place the dough into the fridge for 10/15 minutes, this makes the mixture much easier to work with
After cooling scrape the dough onto a floured surface and shape into two vaguely oval loaves 
Place loaves on a parchment lined baking sheet and bake for 30 minutes
Once baked remove from oven and let cool for 10 minutes 
Slice loaves into 1/2 inch cookies like pictured 
Bake or air fry at the 350f for 15 minutes
